Midnight snack anyone?

Tonight I made seasoned potato wedges for a midnight snack. I've had a craving for hot chips/fried food all week. My craving was actually for tempura prawns and vegetables, but I was happy to settle for potato wedges.

 

I will share the recipe with you...

 

About 500g red potatoes, skin on
2 tbsp olive oil 
1/4 tsp onion powder 
1/4 tsp garlic powder
1/2 tsp sweet paprika 
1/4 tsp sea salt 
Ground black pepper 
1 tbsp Gourmet Garden semi dried parsley 
30g shredded Parmesan cheese*

 

Preheat oven to 210 C. Line a large baking tray with baking paper.

Cut the potatoes in half lengthwise, then cut each half into three.

Put the olive oil, seasoning and potatoes in a large bowl and toss together.

Place the potatoes on the baking tray with plenty of room between each wedge.

Cook for 45 minutes, turning half way through cooking.

When the wedges are ready, put them in a large bowl with the parsley and Parmesan cheese and toss together with a spatula.

Let them sit for 5 minutes before serving (they will be hot).

 

They are very nice served with dipping bowls of sour cream and sweet chilli sauce, but I didn't bother with this tonight.

 

*The original recipe had Pecorino cheese but they don't sell the brand I like (True Organics) at my Woolworths anymore.

oh thanks for the recipe! I have a midnight snack occasionally but usually in bed by 10pm. Hope you get to have your tempura prawns and vegetables soon sounds yummy too 😄
